Bacon and Shrimp Pasta
Sometimes it can be difficult to find different things to cook while you are travelling. You don’t always have all the right ingredients, and you can’t carry too much, due to excess luggage fees, and sometime you can’t find what you can at home. So it is really nice to find a dish that is simple, with not too many ingredients, that was super tasty. I found the recipe Bacon and Shrimp Pasta from “Delish”, click here to go to page.
I did have to make a few adjustments, so my picture looks a little different to the real thing, but it tasted amazing, and I would make it either way.
Here is what I did different
I bought cooked prawns, so when they went in, I didn’t wait long to put in the other ingredients, as the prawns were already pink 😊. I accidentally bought canned chopped tomatoes, instead of fresh. So I just drained them really well, and gave the juice to the dog (after checking with the owners of course), then I put the chopped tomatoes in, in place of the fresh ones. I always carry a few spices with me, so don’t use fresh garlic (unless the homeowner has stated I can use theirs), when travelling, I used garlic powder to taste.
I couldn’t find baby spinach, so used frozen peas instead. (I’m not a fan of wilted spinach, so if I did buy it, I would have just tossed it through at the end and not wilted it. No crushed red pepper flakes, just used chilli powder. My cheese was a mix of mozzarella, parmesan and cheddar, hence it being a little thicker. I bought it in a packet that way, much easier to sue for other dishes and no waste, while travelling. My spaghetti wasn’t angel hair, I just bought the thinnest and cheapest I could find, and it was very good. I garnished with grated parmesan, as I don’t carry stuff like garnish when travelling. It tasted very similar to my favourite dish at the Cheesecake Factory, Bistro Shrimp Pasta.
So very simple changes, and it still tasted great. Give it a try and let me know what you think.
